- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 clove garlic, minced

- 1 avocado
- 1 tablespoon lemon juice
- 1/4 cup Greek yogurt or sour cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare your baking sheet by lining it with parchment paper.
- Process the salmon in a food processor until finely chopped.
- Combine ingredients in a bowl: salmon, breadcrumbs, Parmesan, parsley, egg, garlic, salt, and pepper.
- Shape the mixture into balls, about 1.5 inches, and place them on the baking sheet.
- Bake for 15-20 minutes until golden brown.
- Prepare the avocado sauce by blending avocado, lemon juice, yogurt, salt, and pepper until smooth.
- Serve the meatballs warm alongside the avocado sauce.
