Description

Delicious baked salmon meatballs served with a creamy avocado sauce, offering a rich blend of flavors and healthy ingredients.


Ingredients

  • 1 lb fresh salmon fillets
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado
  • 1 tablespoon lemon juice
  • 1/4 cup Greek yogurt or sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your baking sheet by lining it with parchment paper.
  3. Process the salmon in a food processor until finely chopped.
  4. Combine ingredients in a bowl: salmon, breadcrumbs, Parmesan, parsley, egg, garlic, salt, and pepper.
  5. Shape the mixture into balls, about 1.5 inches, and place them on the baking sheet.
  6. Bake for 15-20 minutes until golden brown.
  7. Prepare the avocado sauce by blending avocado, lemon juice, yogurt, salt, and pepper until smooth.
  8. Serve the meatballs warm alongside the avocado sauce.

Notes

Always use fresh salmon for best flavor. You can prepare the meatball mixture a day in advance and refrigerate before baking.
