- 4 chicken breasts, skinless and boneless
- 1 cup mushrooms, sliced (shiitake or cremini)
- 2 lemons, juiced and zest of 1/2 lemon
- 2 tablespoons olive oil (extra virgin)
- 2 garlic cloves, minced
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- 1 cup chicken broth (low-sodium)
Instructions
- Preheat the oven to 375°F (190°C).
- Place chicken breasts in a baking dish and season with salt, pepper, and thyme.
- Mix lemon juice, olive oil, and garlic in a bowl, then pour over the chicken.
- Scatter sliced mushrooms on top of the chicken.
- Add chicken broth to the dish.
- Cover with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes.
- Serve hot and enjoy your meal.
Notes
Consider marinating the chicken for an hour before baking for deeper flavor. Can also be cooked in an air fryer at 360°F (180°C) for 15-20 minutes.
