Description

A delightful dish featuring succulent chicken breasts baked with a zesty lemon and creamy mushroom sauce, perfect for any occasion.


Ingredients

  • 4 chicken breasts, skinless and boneless
  • 1 cup mushrooms, sliced (shiitake or cremini)
  • 2 lemons, juiced and zest of 1/2 lemon
  • 2 tablespoons olive oil (extra virgin)
  • 2 garlic cloves, minced
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • 1 cup chicken broth (low-sodium)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place chicken breasts in a baking dish and season with salt, pepper, and thyme.
  3. Mix lemon juice, olive oil, and garlic in a bowl, then pour over the chicken.
  4. Scatter sliced mushrooms on top of the chicken.
  5. Add chicken broth to the dish.
  6. Cover with foil and bake for 25-30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes.
  8. Serve hot and enjoy your meal.

Notes

Consider marinating the chicken for an hour before baking for deeper flavor. Can also be cooked in an air fryer at 360°F (180°C) for 15-20 minutes.
