- 1 8-inch flour tortilla
- 2 slices cooked and chopped bacon
- 2 large eggs
- 1/3 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 teaspoon butter (optional)
Instructions
- Whisk the eggs with salt and pepper in a small bowl.
- Heat a non-stick frying pan over medium-low heat and add butter if desired.
- Pour the egg mixture into the pan and cook until the edges begin to set.
- Sprinkle half the bacon and cheese over the eggs, then press a tortilla on top.
- Flip the quesadilla using a spatula and cook for 2-3 minutes until golden.
- Sprinkle the remaining bacon and cheese on one half, fold, and cook until cheese melts.
- Slide the quesadilla onto a cutting board, let rest, and slice into wedges.
Notes
