Crispy, golden-brown chicken bites seasoned with garlic, onion, and smoked paprika, perfect for any gathering or family dinner.

- 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch bite-size pieces
- 1 cup buttermilk
- 1 teaspoon hot sauce (optional)
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1 cup panko breadcrumbs
- ½ cup finely grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- Cooking spray or oil mister
Instructions
- Rinse and pat dry your chicken pieces and transfer them to a medium bowl.
- In another bowl, whisk together buttermilk and hot sauce. Pour over the chicken, ensure it’s well-coated, cover, and refrigerate for at least 30 minutes, ideally up to 4 hours.
- Set up breading stations: In one bowl, whisk eggs and flour together. In another, combine panko, Parmesan, garlic powder, onion powder, smoked paprika, oregano, salt, and pepper.
- Preheat the air fryer to 400°F (200°C) for about 3 minutes.
- Remove chicken from buttermilk, dredge in the egg mixture, then coat with the breadcrumb mixture.
- Lightly spray the air fryer basket and place the chicken bites in a single layer. Cook for 5 minutes.
- Flip chicken bites, spray with cooking oil, and continue cooking for another 4-5 minutes until golden brown (check internal temperature reaches 165°F/74°C).
- Transfer chicken bites to a plate lined with paper towels for 2 minutes before serving.
Notes
For added crunch, try marinating the chicken overnight. You can also bake them in a standard oven at 425°F (218°C) for 20-25 minutes if you don’t have an air fryer.
